Wrestlers Contracts
Do they include clauses for say, a certain number of title shots, PPV headlining, run with titles and things like that?

I do think some do, but not that many. Then there's the 'creative control' contracts when the wrestler has control over the charcter, but I think Hogan managed to stop all that after being a dick

Some do. I'm pretty sure that when Undertaker renewed his contract a few years ago, he had a guaranteed title run.

Not to mention practically all of the higher-ups in WCW back in the day.
