Who were all the Dudleys when they were in ECW like Sign Guy Dudley, Dudley Dudley, Dances with Dudleys ect. ect.

Well the first Dudley family members were brought in around '95,
Shortly after BuhBuh Ray Dudley was brought into the mix, then Dudleys of different races, A native american, (Dances with Dudleys), and D-Von Dudley. Then came Spike, Sign Guy Dudley, and Hat Guy Dudley. D-Von split the Dudley clan with a heel turn, and the family began siding with him one by one. Spike was the only one who didn't turn. D-Von and Buh Buh have been together ever since.

So as far I can remember, the complete family was:

Big Dick Dudley
Little Snot Dudley
Dudley Dudley
Buh Buh Ray Dudley
D-Von Dudley
Dances with Dudleys
Spike Dudley
Hat Guy Dudley
Sign Guy Dudley

To answer your question,if I have it right,The Dudleys were/are:
*Dudley Dudley
(he is Japan's Jeff Bradley,aka "ODD" - Original Dudley Dudley)

*Snot Dudley
(in reality,Anthony Michaels,whose profile can be seen at TheFOW.com)

*Dances With Dudley
(real name is Adolpho something or another; he's missing in action)

*Sign Guy Dudley
(later was turned into Lou E. Dangerously and then he vanished)

*Chubby Dudley
(aka Bay Ragni from the LAW Wrestling Promotion)

& Big Dick Dudley,Little Spike Dudley,and D-Von & Bubba (or Buh Buh)
Ray Dudley we all (or at least most of us) know about already.....
