I actually think that Colt Cabana and Piper would be a funny ass combination but after seeing what Piper did to a very, VERY promising Sean O'haire gimmick I wouldn't wish that upon anyone I actually like, much less Colt.

He could do backstage interviews, commentate (every now and then if he can stick to the point), announce (sure he doesn't have a good announcer voice, but he'd be a good fill in for a night or two).

I'd rather not have him wrestle. He looks to be in a lot better shape now than he's been in at least 5 years.

Piper was the original heel colour commentator (before Ventura) and also made an entertaining (if a little overbearing) face announcer in the early 90s too. The man can talk. And he'd be better than current Lawler... maybe even bring out the competitive side in Lawler to force him to up his game... perhaps return 'The King' to his heel leanings.
